The appellation: Chablis AOC

The Chablis AOC is one of the most celebrated appellations of northern Burgundy, in France, and represents the most mineral, taut and refined expression of Chardonnay. Chablis wines are dry, sharp and long-lived whites, known for their chalky, saline character, due to the Kimmeridgian soils rich in marine fossils and to the cool, continental climate of the area. Even though this is Chardonnay as a single variety, Chablis wines are radically different from those of the Côte d'Or or of warmer areas: no overripeness, no intrusive oak, just purity, freshness and terroir.

Who makes it: Domaine Raoul Gautherin & Fils

Domaine Raoul Gautherin & Fils is a historic family estate in Chablis, Burgundy, whose origins go back to 1585. Founded in its present form by Raoul Gautherin in the 1950s, it is today run by Adrien Gautherin, representing the eighth generation, alongside his father Alain. The philosophy of the domaine rests on a simple principle: "To make a great wine, you first need great grapes". Winemaking is traditional, with fermentation in stainless steel and ageing on the fine lees, limiting the use of wood in order to preserve the purity of the terroir. Each parcel is vinified separately in order to express the unique characteristics of every vineyard to the full.
