Who makes it: Nicolas Maillet

Nicolas Maillet is an independent producer based at Vergisson, in the heart of the Mâconnais, one of the areas of Burgundy best suited to producing Chardonnay. After taking over the family estate, Nicolas chose to follow an organic, non-interventionist approach, with the aim of making wines that respect the terroir and the identity of the variety. The winery works without chemical products in the vineyard, with spontaneous fermentations and ageing in stainless steel or neutral wood, in order to bring out the purity of Chardonnay to the full. The result is a range of elegant, fresh and mineral wines, with great potential to evolve.

Ageing methods used for Mâcon-Verzé “Le chemin blanc”

In Stainless Steel (7–18 months)

Ageing in stainless steel for between 7 and 18 months is a winemaking choice aimed at obtaining more structured, complex wines, while retaining the varietal purity and aromatic precision typical of an inert material. Unlike short ageing periods, here the wine is left to mature for longer in stainless steel so that it stabilises naturally, develops slowly and gains greater balance, without any aromatic interference from wood or oxidation.
