Pez (2020) - Norina Pez

In the heart of the Collio, one of Italy's finest areas for winegrowing, stands the Norina Pez winery, a name that speaks of tradition and passion. The story of Norina Pez is closely bound up with Friulano, a grape variety that has won over a great many palates. The story goes that Norina, the founder, was a woman of great determination and vision. In the '60s, when Friulano was still little known beyond the region's borders, Norina decided to stake everything on this variety, firmly believing in its potential. She was one of the first to export Friulano beyond Italy, helping to make the Collio known as one of the country's great wine areas.

Who makes it: Norina Pez

The Norina Pez estate has deep roots in Dolegna del Collio, where it all began with grandfather Giovanni Bernardis, who set up a small farm in the early 1900s. Together with grandmother Adriana and their children, Giovanni turned to viticulture, cereal growing and livestock, laying the foundations for a tradition that continues to this day. In the '70s came the real turning point: Giuseppe Bernardis and Norina Pez decided to focus their energies exclusively on making and selling wine. Thanks to this change, the estate was able to improve the way it manages its vineyards, specialising in high-quality wines that reflect the authenticity of the area.

The vine of Pez

Friulano

Friulano is a native white grape variety and a symbol of Friuli-Venezia Giulia, capable of producing elegant, dry and terroir-driven wines, with an unmistakable almond note. Historically known as Tocai Friulano, it took its present name after the agreement with Hungary that banned the use of the term "Tocai" in order to avoid confusion with Hungarian Tokaji. It is today one of the most representative Italian whites for typicity, versatility and aromatic recognisability, often chosen to accompany the dishes of Friulian cuisine.

Winemaking methods used for Pez

Fermentation in barrique

Alcoholic fermentation in barrique is a winemaking technique that takes place inside small wooden vessels, barriques, capable of profoundly influencing the aromatic and structural profile of the wine. This process not only turns the sugars into alcohol and CO₂ through the action of the yeasts, but also encourages a harmonious integration between the wine and the aromatic compounds released by the wood.

Ageing methods used for Pez

In barrique (7–18 months)

Ageing in barrique for 7 to 18 months is one of the most common stages for medium- and full-bodied wines, where the wood has time to interact with the wine in depth without dominating it. This length gives balanced wines, with greater aromatic complexity, polished tannins and a more refined evolutionary profile, keeping varietal and tertiary notes in balance.
