This wine is made in a historic winery dating back to 1890, in the heart of Tuscany. It is an organic wine, the result of a rigorous selection of grapes, characterised by its balanced flavour and robust structure. Its distinctive character also comes from the maturation process, which takes place in French oak barriques for at least 12 months.

Who makes it: Cantina Micheli
At Lona-Lases, in the striking Valle di Cembra, in 2007 Francesco Micheli, barely twenty years old, decided to bring a dream to life: to reclaim abandoned land and restore dry-stone walls in order to plant Chardonnay and the grape varieties typical of this heroic valley. The first grapes, picked in 2017, were hit by bad weather and yielded only 1 223 kg, a figure that inspired the name of his first Metodo Classico: “1223 kg”.

Kerner
Kerner is an aromatic white grape variety created in 1929 in Germany from a crossing of Riesling and Schiava Grossa (Trollinger). Its name honours the German poet and physician Justinus Kerner, a great wine enthusiast. Widespread above all in Alto Adige, Germany and Switzerland, Kerner combines the aromatic intensity of Riesling with the hardiness and productivity of Schiava, giving rise to fragrant, fresh and easy-drinking wines that are also capable of good structure and longevity.

Alcoholic fermentation with selected yeasts

Slow fermentation is a winemaking process characterised by a controlled, extended pace in the transformation of sugars into alcohol and CO₂ by the yeasts. This technique, often applied to high-quality wines, makes it possible to preserve and enhance the most delicate and complex aromas, ensuring greater depth and harmony in the final product. Thanks to the low temperature and continuous monitoring, slow fermentation offers producers the chance to create elegant, well-balanced wines, bringing out the unique characteristics of the grape variety and the terroir. This approach is particularly prized for aromatic white wines, sweet wines and sparkling wines.

In stainless steel
Ageing in stainless steel is a winemaking practice aimed at preserving the freshness, aromatic integrity and varietal purity of the wine. It is used above all for white, rosé and young red wines, but also for light, easy-drinking reds that do not require maturation in wood. Stainless steel vessels are inert and impermeable to oxygen, so they do not interact with the wine: this makes it possible to bring out the fruity, floral and mineral component of the grape and of the terroir.
