Valpolicella Ripasso (2020) - Secondo Marco

In the heart of the Valpolicella, the Secondo Marco winery has reinterpreted a centuries-old tradition with its Valpolicella Ripasso Superiore DOC. The "ripasso" technique has ancient origins, going back to the 18th century, when growers discovered that re-fermenting young wine on the Amarone pomace produced a richer, more complex nectar. Marco Speri, who founded the winery, inherited this family tradition but added an innovative touch: an obsessive attention to sustainability and biodiversity. His vision has made Secondo Marco a byword for balance between past and future, where every bottle tells a story of passion and

The appellation: Valpolicella Ripasso Superiore DOC

Valpolicella Ripasso Superiore DOC is one of the most distinctive expressions of Valpolicella, in the Veneto, made using a unique technique that "repasses" the base Valpolicella wine over the pomace of Amarone or Recioto. This process gives the wine greater body, structure, alcohol and aromatic complexity, turning it into an enveloping, velvety red that is much appreciated both in Italy and abroad. The "Superiore" designation means a higher minimum alcohol level (at least 12% vol) and a minimum ageing period of 12 months, which heightens its depth and longevity.

Valpolicella

Valpolicella

Valpolicella is one of the most celebrated wine areas in Italy, in the province of Verona, in Veneto, between Lake Garda and the Lessini Mountains. It is universally known for producing intense, fragrant, long-lived reds, among which the famous Amarone della Valpolicella, Ripasso and Valpolicella Classico stand out. The region is a mosaic of valleys, limestone hills, and a mild, breezy climate. This combination favours the cultivation of native grapes such as Corvina, Corvinone, Rondinella and Molinara, which give rise to wines ranging from elegant and easy-drinking to structured and contemplative.

Winemaking methods used for Valpolicella Ripasso

Ripasso

Ripasso is a traditional winemaking technique that stands out for its ability to enrich red wines, giving them a unique complexity and an intense aromatic profile. This method is based on the use of the pomace left over from Amarone production, which is added to a young wine, usually Valpolicella, for a further fermentation.

Ageing methods used for Valpolicella Ripasso

In cask (7–18 months)

Ageing in cask for between 7 and 18 months is a classic but measured approach to maturing wine. Large casks, usually Slavonian oak or untoasted French oak, allow natural micro-oxygenation, which helps the wine settle, knit together and develop a more complex, harmonious profile. This kind of ageing is widely used for terroir-driven reds and for some structured whites that are after depth without the aromatic intensity a barrique would give.
