Wines with ageing In the bottle

Ageing in bottle is a fundamental stage in the production of quality wines, during which the wine continues to develop in an oxygen-free environment. This process allows the wine to harmonise its components, soften the tannins and develop more complex, mature aromas, without the external influence of wood or other materials.Ageing in bottle can last from a few months to several years, depending on the type of wine and the style sought, and is particularly used for structured red wines, long-lived whites and metodo classico sparkling wines, improving their elegance, finesse and length on the palate.

Characteristics of Wines Aged in Bottle

Colour

  • Reds: Intense ruby red in the young wines, with garnet reflections in the mature ones.
  • Whites: Bright straw yellow with golden shades in evolved wines.
  • Sparkling wines: Pale straw yellow with a fine, persistent perlage.

Aromas

  • Fruity: Ripe fruit (cherry, plum, peach), nuts and candied citrus.
  • Floral: Dried flowers, camomile, lime blossom.
  • Spicy: Vanilla, cinnamon, nutmeg, black pepper in the more evolved reds.
  • Autolytic (in the sparkling wines): Notes of bread crust, brioche, toasted almond.
  • Mineral: Nuances of graphite, flint and a saline salinity.

Palate

  • Harmonious and complex: Perfect balance between fruit, acidity and tertiary aromas.
  • Structured and soft: Silky tannins in the reds, balanced acidity in the whites.
  • Elegant and persistent: A long finish with developed, savoury notes.

Advantages of Bottle Ageing

  1. Slow, harmonious maturation: The tannins soften and the aromas integrate perfectly.
  2. Aromatic complexity: Tertiary aromas of spices, dried fruit and light toasting develop.
  3. Elegance and finesse: The wine becomes rounder, more velvety and more persistent.
  4. Longevity: It improves ageing capacity and resistance to oxidation.

Stages of the Process

1. Bottling

  • The wine is filtered and bottled in sterile conditions to avoid contamination.
  • The bottles are sealed with cork or screw caps, depending on the style desired.

2. Bottle Ageing

  • The bottles are stored in a horizontal position  to keep the cork moist.
  • The wine rests in temperature-controlled cellars (12-15°C) and in the dark, to protect the aromas and prevent oxidation.
  • The ageing period ranges from a few months to several years, depending on the wine:
    • Fresh white wines: 3-6 months to enhance freshness.
    • Structured reds and Riserva: 1-3 years to soften the tannins and develop complexity.
    • Metodo Classico sparkling wines: At least 12-36 months on the lees for fine bubbles and evolved aromas.

3. Tasting and Release

The wine is tasted regularly to assess how it is developing and is only released when it reaches the desired balance.
