The Champagne AOC is one of the most prestigious and internationally recognised appellations, a symbol of excellence in the production of metodo classico sparkling wines. Officially founded in 1936, this appellation protects the production of sparkling wines made exclusively in the historic region of Champagne, in north-eastern France.

Production Area of Champagne AOC
The geographical area recognised by the Champagne AOC takes in five main production areas:- Montagne de Reims – Dominated by Pinot Noir, makes structured, complex wines.
- Vallée de la Marne – With a predominance of Pinot Meunier, gives fruity, soft Champagnes.
- Côte des Blancs – The kingdom of Chardonnay, for elegant, mineral wines.
- Côte de Sézanne – Similar to the Côte des Blancs, specialising in Chardonnay.
- Aube (Côte des Bar) – It prefers Pinot Noir, with rounder, more opulent wines.
Grape Varieties Permitted in Champagne AOC
The appellation Champagne AOC allows the growing of seven grape varieties, but the three main ones account for almost all the production:- Pinot Noir (38%): Gives structure, body and aromas of red fruit.
- Pinot Meunier (32%): Brings fruitiness, softness e readiness to drink.
- Chardonnay (30%): Adds freshness, finesse e longevity.
Production Method: The Excellence of the Méthode Champenoise
Champagne production follows the strict Méthode Traditionnelle, which involves refermentation in the bottle.Stages of Winemaking
- Soft pressing: To obtain a pure, delicate must.
- Alcoholic fermentation: In stainless steel or wood, to preserve freshness and aromas.
- Complete malolactic fermentation: To reduce acidity and soften the wine.
- Blending (Cuvée): Blending wines from different vintages and crus for balance and style.
- Tirage: Addition of sugar and yeasts to start the refermentation in the bottle.
- Ageing on the lees: Minimum 15 months for non-vintage wines and 36 months for vintage wines, often extended for prestige cuvées.
- Riddling and Disgorgement: The bottles are turned by hand or mechanically to gather the lees in the neck, which are then removed by disgorging.
- Dosage: Addition of the liqueur d'expédition to define the style (Brut, Extra Brut, Demi-Sec).
- Corking and Resting: The bottles are sealed with the traditional cork and left to rest before sale.
Styles of Champagne AOC
The Champagne AOC takes in different styles of sparkling wine, differing in composition and production method:- Brut Nature: No added sugar, dry and pure.
- Extra Brut: The tiniest dosage of sugar.
- Brut: The most widespread style, balanced between freshness and softness.
- Demi-Sec and Doux: Sweeter versions, ideal for desserts.
- Blanc de Blancs: Produced exclusively from Chardonnay, elegant and mineral.
- Blanc de Noirs: Obtained from Pinot Noir and/or Pinot Meunier, more structured and fruity.
- Rosé: Obtained by adding red wine or through maceration.
Ageing and Disgorgement in the Champagne AOC
The Champagne AOC also stands out for its long periods of ageing on the lees, which enrich the wine with complex aromas and a creamy texture.- Ageing: Minimum 15 months, but the prestige cuvées rest 6-8 years or more.
- Manual disgorgement: An artisanal method that guarantees precision and quality, preserving the finesse of the wine.
