Trento DOC

The Trento DOC was recognised in 1993, but the history of its sparkling wines dates back to the early years of the twentieth century. It was Giulio Ferrari, a winemaker from Trentino, who introduced the production of Metodo Classico sparkling wines in 1902, taking inspiration from the great French Champagnes. Since then, Trentino has established itself as one of the areas best suited in the world to producing quality sparkling wines.Today, Trento DOC represents the excellence of Italian sparkling winemaking, thanks to the commitment of local producers and to the way they have brought out the best of the terroir.

Production Area

The Trento DOC appellation covers the whole territory of the province of Trento, with vineyards stretching along the valleys and the slopes of the Dolomites.

Characteristics of the Area

  • High altitudes: The vineyards lie between 200 and 700 metres above sea level, ensuring an ideal microclimate for the ripening of the grapes.
  • Varied soils: From the limestone make-up of the Dolomites to the alluvial soils of the valleys.
  • Sunny aspects: Facing south-east to maximise sunlight exposure.

Climate

  • Cool and breezy: Helped by the day-night temperature swings.
  • Alpine winds and the Garda breeze: They help keep the grapes healthy and aromatic.

Permitted Grape Varieties

Production of Trento DOC is based mainly on international varieties, selected for their ability to express the characteristics of the Metodo Classico at their best.

White Grape Varieties

  • Chardonnay: The absolute star, it gives elegance, freshness and structure.
  • Pinot Bianco: It contributes to finesse and balance.

Black Grape Varieties

  • Pinot Nero: It brings complexity and longevity, ideal for blanc de noirs.
  • Meunier: Used in smaller quantities to enrich the aromatic character.

Production Techniques

Production of Trento DOC follows the Metodo Classico strictly, which involves refermentation in the bottle and long ageing on the lees.

1. Harvest

  • Hand harvesting of the grapes, generally between August and September, to preserve acidity and freshness.

2. Gentle Pressing

  • The grapes are gently pressed to obtain a high-quality free-run must.

3. First Fermentation

  • The must ferments at controlled temperature, turning into base wine.

4. Blending and Tirage

  • The base wines are blended, and the liqueur de tirage to start the second fermentation in the bottle.

5. Ageing on the Lees

  • The wine rests in bottle on the lees for a minimum of 15 months (up to more than 60 months for the Riserva bottlings), developing complexity and a fine, persistent bubble.

6. Remuage and Disgorgement

  • After remuage, the spent yeasts are removed and the liqueur d'expédition to adjust the level of sweetness.
