Valpolicella Ripasso Superiore DOC
The Valpolicella Ripasso Superiore DOC is one of the most distinctive expressions of Valpolicella, in the Veneto, made with a unique technique that "re-passes" the base Valpolicella wine over the pomace of Amarone or Recioto. This process gives the wine greater body, structure, alcohol and aromatic complexity, turning it into an enveloping, velvety red much appreciated both in Italy and abroad.
The designation "Superiore" implies a higher minimum alcohol content (at least 12% vol) and a minimum ageing period of 12 months, which enhances its depth and longevity.

The “Ripasso” method
The fresh Valpolicella wine is refermented on the pomace of Amarone or Recioto, still rich in sugars and aromas. This process:
It lasts from 7 to 15 days
It increases alcohol content, structure and aromas
It gives the wine softness, depth and developed notes
Organoleptic characteristics
Colour:
Deep ruby red, with garnet highlights as it evolves
Aromas:
Ripe red fruit: cherry, plum, blackberry
Spicy notes: black pepper, cinnamon
Hints of evolution: tobacco, leather, cocoa, liquorice
Sometimes toasting (if aged in wood)
Palate:
Soft, full-bodied, warm, with velvety tannins
Balanced between freshness and alcohol
Long and lingering, with returning spicy and fruity notes
Minimum ageing
12 months, of which at least part in wood (large casks or barriques)
In bottle: a further 6 months recommended to show it at its best
Food pairings
Braised meats, stews, roasts
Game (wild boar, hare)
Aged cheeses (Monte Veronese, mature Asiago)
Pasta with meat ragù, lasagne, polenta with rich sauces
