Chablis and its wines

Chablis: My personal top three

Chablis is one of the most iconic wine districts of France and the northernmost of the Burgundy, in the department of theYonne, between Dijon and Paris.
Famous throughout the world for its dry, elegant white wines made exclusively from Chardonnay, Chablis is a byword for freshness, minerality and aromatic precision.

The vineyards rise on soils Kimmeridgian, a unique combination of clay, marl and marine fossils, which gives the wines their famous a mineral, savoury imprint, unmistakable compared with the other Chardonnays of Burgundy.

What is the Chablis wine district?

Chablis is divided into four AOC quality levels, ranked by hierarchy and terroir:

  1. Petit Chablis AOC → From Portlandian soils, fresh wines for immediate drinking.

  2. Chablis AOC → The main and most widespread level, from Kimmeridgian soils: fresh, mineral, versatile.

  3. Chablis Premier Cru AOC → Selected vineyards on well-exposed hills; structure, complexity and excellent longevity.

  4. Chablis Grand Cru AOC → Just 7 climats on the right bank of the river Serein, the richest and longest-lived wines of the area.

Characteristics of Chablis Wines

Colour

  • Pale straw yellow with greenish highlights when young, golden in the aged wines.

Aromas

  • Fruity: Green apple, citrus, white peach.

  • Floral: Wild flowers, camomile.

  • Mineral: Chalk, flint, seashell.

  • Mature (in the Grand Crus): Honey, butter, hazelnut, but always with freshness.

Palate

  • Fresh and Taut: Vibrant acidity, medium body, dry finish.

  • Savoury and Precise: A characteristic mineral signature from the soils.

  • Elegant and Long-lived: The Premier Cru and Grand Cru wines develop magnificently.

Typical Grape Variety of Chablis

  • Chardonnay: The only one allowed, made as a single variety without the support of wood (except in a few selected Grand Cru and Premier Cru wines). In Chablis it takes on a taut, mineral, vertical profile, very different from the one it shows in warmer climates.

Why Choose a Wine from Chablis?

A wine from Chablis is the perfect choice for anyone who loves dry, elegant and mineral whites, excellent paired with oysters, seafood, shellfish, goat's cheeses (e.g. Crottin de Chavignol), sushi and dishes based on butter and lemon.
The Premier Cru and Grand Cru wines are also ideal with richer dishes, such as poultry in sauce or mushroom risotto
