Winemaking techniques: Extended maceration (2–3 weeks) – Discover the Best Wines
The extended maceration, lasting between 2 and 3 weeks, is a traditional red-winemaking technique used to obtain wines of great structure, depth and potential to develop. During this period, the the grape skins remain in contact with the must for longer than average, allowing a more intense extraction of colour, tannins and complex aromatic compounds.
This winemaking choice is typical of wines for long ageing, designed to express themselves over time.
What a maceration of 15–21 days involves
| Appearance | Result |
|---|---|
| Colour | Deep ruby or garnet red, intense and persistent |
| Tannin | High, with a fine or firm grain depending on the grape variety |
| Aromas | Ripe black fruit, spices, earthy notes, often hints of dried flowers |
| Structure | Full-bodied, dense, with an excellent ability to evolve |
| Longevity | High: from 10 to more than 20 years in the best cases |
