Nicolas Maillet

Nicolas Maillet is an independent producer based in Vergisson, in the heart of the Mâconnais, one of the best-suited regions in Burgundy for producing Chardonnay. After taking over the family estate, Nicolas chose to follow an approach organic and non-interventionist, with the aim of creating wines that respect the terroir and the identity of the grape variety.

The winery works without chemicals in the vineyard, with spontaneous fermentations and ageing in stainless steel or neutral wood, to bring out to the full the purity of the Chardonnay. The result is a range of wines elegant, fresh and mineral, with great potential to develop.

The Nicolas Maillet Method

The estate's vineyards are farmed according to organic principles, with no use of pesticides or chemical fertilisers. The harvest is done by hand, with careful selection of the grapes to guarantee optimal quality. In the cellar, fermentations are spontaneous, thanks to indigenous yeasts, and the winemaking process is as non-invasive as possible.The aim is to produce Chardonnay pure and vibrant, which reflect the minerality of the limestone soils of the Mâconnais, giving wines of great aromatic expressiveness and depth.

Mâcon Verzé

A fresh, crystalline Chardonnay, with notes of citrus, white flowers and marked minerality. A refined, balanced wine, perfect for fish dishes and soft cheeses.

Mâcon-Villages

A harmonious, lively white, with aromas of green apple, hazelnut and wild flowers. An enveloping, long palate, ideal for aperitifs and light starters.

Mâcon Cruzille

A complex expression of Chardonnay, with notes of white peach, almond and a light smoky hint. Structured and persistent, perfect with seafood and white meat.

Viré-Clessé

A great Mâconnais Chardonnay, with extraordinary aromatic depth. Aromas of tropical fruit, honey and light spices, with a lovely acidity that guarantees its longevity.
